Belgian Saison – Look at the Head Retention! I made the Belgian Saison exactly as recommended by Brewer’s Best recommended procedures and the beer came out perfect! I topped off the wort with water just below the 5 gallon mark so I ended up with 1.052 O.G. After fermentation was complete I had 5.75% alc prior to bottling, but after bottle conditioning, it may have been slightly higher. I tried the first bottle after 2 weeks of bottle conditioning and found that it needed some extra time, but after 4 weeks the carbonation was perfect…

Awesome! Awesome recipe. I finished this one off with some chamomile flowers in the secondary for a couple hours emulating the St. Louis Perrenial Artisan Ales Saison de Lis (they make some great beers). Nice citrus hint up front along with a bit of pepper and a nice dry finish. This is my second batch and has only been in the bottle for a week. I’m expecting even better things as time goes by.
